spumoni terrine



Yesterday we celebrated my Grandma's 83rd birthday with a spaghetti dinner.  I was in charge of dessert so I made a spumoni terrine.  It's my favorite after dinner treat at The Old Spaghetti Factory.

I didn't have time to make ice cream so I picked up some black cherry ice cream, pistachio gelato and chocolate ice cream.  I also bought a jar of maraschino cherries and ate half the jar while making the terrine ;)

First I lined a loaf pan with plastic wrap.  While the cherry ice cream was softening, slice up half a jar of maraschino cherries.  In a bowl, mix the cherries and a little of the syrup for color with the ice cream.  Pour into the loaf pan and freeze for 1 hour.  Repeat with pistachio and chocolate ice cream layers.  You can add shelled pistachio pieces to the gelato if yours doesn't have any.

For the 'magic shell' topping, mix a half a bag of semi-sweet chocolate chips with a 1/4 cup of coconut oil over low heat.  Turn out the terrine on a platter, remove plastic wrap and slowly drizzle chocolate over the top and let harden.  Slice up and enjoy!




Especially popular with the 2 months to 3 year old crowds.
